Just don't make it a sexual relationship. He has to mature first, if he's willing to say that he needs time to be ready in a relationship then make it clear that you need time to trust him before going that far.
Alot of ex's keep their ex girlfriends as friends for easier relations. Don't fall for that. As to do anything special for him, well I'd assume that just being yourself is enough. There's no need to go over the top since the reasons for your breakup didn't involve personality troubles or such.
Perhaps doing something you never did before to let him see more sides of you that he hasn't seen would be a good idea. Show him WHY he should consider you a worthy potential girlfriend. And remember that if he's not making any effort, or as much as yo are, then it's best to move on.
I wouldn't go out of your way. If he's just expecting to have a chill dinner and you make a super deal about it then it might freak him out. Don't get your hopes up and create random senarios. Go to a nice dinner and talk and see where you both are at. Though things might be smoother for himin life it doesn't mean he's ready to settle down. He may or may not be ready.
