I would not have a problem allowing a woman to do anything she wanted to me. I wouldn't want to be hurt choked stuff like that but if she wanted to try new things on me I would be all for it.
Whatever they wanted to do? Well it depends if I want them to do it on/to me. I would not let her do anything to/on me what I wouldn't enjoy or like. And vice versa.

For most part a guy wouldn't say no to trying something new. Just talk with him and be honest about what you want. It should be the same way if a guy wants to try something different. If one person doesn't want to do something then don't do it but don't knock it until you've tried it.
Your question to men and women sound slightly different though... If I asked my woman to do something for me or to me and she wouldn't, I would ask her why and try to work it out.. It might be something creepy for her, or she might not totally feel comfortable about it.. And I would try to encourage her to do it, if it is something I wanted her to do to me... But I don't think I would feel comfortable to let her do anything she wanted to me.. (unless we are on the same page that is)..
