I can't image shoving an entire roll in my mouth and struggling to chew would be an attractive look.
Is there a way to eat it that's not as messy or awkward?

Simpler rolls will probably tend to be smaller, the more complex rolls with many ingredients will naturally take up more space. Each restaurant will be different so giving specifics probably won't be 100% helpful. But something like a spicy tuna roll will probably be easier to handle than a spider roll or deep fried rolls.
Also consider sashimi if you want to insure easy to eat, less messy options.
But have fun and don't worry so much about that, he might find it funny/cute if you end up with a challenging roll to eat and make a big mess :-P
Find a good sushi restaurant, not those cheap places, you get a menu card and decide
they then proceed serve everything on a platter, along with side dishes, and chopsticks

It always depends on who is cutting the roll. I would ask the waitress to nicely ask the chef to cut the roll into smaller pieces. Nothing wrong with that!
Even if they do come in larger sections, it is not a problem just say excuse me and give er!
He is likely eating the same thing so it's all good! Just enjoy and laugh about it! It will lighten the mood!
Please tell me you at least know how to use chopsticks with at some finesse. Otherwise it just looks weird. Don't worry about shoving stuff in your mouth sushi isn't meant to be stuffed.
I think it's a good date. Just eat slow and if it doesn't fit in your mouth cut it in pieces then eat it. But have fun and enjoy the night.
