I think it's partly about the uniform being a symbol of heroism. I also don't think all uniforms would make a woman swoon.
I think it's the associations with the uniforms that make women react.
1) the guy is thought of as athletic (in theory) - pretty buff. Though I know plenty of cops and volunteer firefighters who are dangerously out of shape (and obese). Women always see the stereotypical "hunky" firefighter calendars and pictures.
2) are worn while protecting someone
3) are worn fending off or chasing after something dangerous (fires, bad guys)
4) are a symbol of authority.
5) They make usually halfway decent money, though it's still pretty low (especially for what they do).
I don't think a boy scout uniform would be particularly attractive to women... and I don't believe, say, a McDonald's uniform, would be seen as sexy to women... unless the guy wearing it is working three jobs just to take care of his family. Generally, I think this is partially the association of teens having these jobs, as well as the low danger risk, and the usually low income.

It's why guys buy trucks. They want to be send out the vibe that they're more manly. It's culture & association to things. Much like clothes one wears that plays a role, too.
Certain brands of girls will pick a lesser looking guy because he is wearing/riding/working in something "manly" that sticks out, because that in and of itself makes him more attractive than raw looks.
Other brands of girls aren't so much -- just an added side-dish of sex appeal (especially if the grew out of it being 'their thang' when younger and it not going so hot).
I have no idea but I freaking LOVE a man in a soldier uniform. When I see men from the U.S. armed forces wearing their uniform, my heart just melts. It's so f***ing sexy. It probably has something to do with the job profession. It's deemed "manly" (not specifically soldiers but also police officers, firefighters, etc.) and yes I know women can have these jobs too but it just seems more rough and kind of gives off a "tough-guy" vibe to me and most are really in shape and I like that. At least, this is how I personally, view men in uniforms.
It's probably the authority figure thing, maybe it's a kind of "Cheerleader effect" too.
But I think mainly if you look at uniforms and suits for men, they're cut very well. They usually emphasize broad shoulders and a V figure in general. You'll also good well groomed and put together, better than what tends to be in style these days like baggy jeans
To me it shows an authority figure.
And a man that is of this nature turns me on.
It shows strength, and that is considered a very masculine quality to have.
This is why many women feel a man looks hot in a uniform.
A lot of us love to feel protected and secure.
A man in uniform makes us feel that way and appeals to us.

I assume there are many reason, shows that he has structure in his life, men in uniform (assuming your talking about like armed forces) are because of their occupation going to be fit, and thus more attractive as is, and are likely to not be clingy again because of their occupation
I think it's a thing where the man has a valued position in society and an off sense of attraction from some women to others. It's just like a guy going for heavier women or a small girl going for a "nerd". It's just a type.
Another thing could be the dominance thin in bed. But that is just a theory. ??I grew up in a family that is basically 90% Marines. The respect I have for them is very high, so when I see a man or woman in uniform I immediately have respect for them. I don't judge by their looks. Funny enough, 3 of my ex's were military based but I never went for them for that reason.
I have no idea why we do but i love men in uniform. whenever i see a man in uniform i want them to just bend me over and f**** me right there! lol its like a fantasy of mines to have sex with a guy in uniform lol. but anyways i guess its just the same as you men liking to see us in dresses or skirts, its just a sexy look!

But a lot is also what it represents.
I'm not sure if you're aware of this but warriors have been doing okay with the ladies for ... Ever.Because the clothing actually fits. Unlike what most people in our culture wears,most of which does not fit properly.
When a man wears a uniform it attracts us females because for one it shows off your masculinity which is a turn on.

a perfectly tailored uniform is a rare, tempting sight. i man once asked me for directions all dressed in a 50s styled u.s. military uniform. it was an experience.

It's not as much as the way it looks, although some uniforms are designed to compliment the male figure, but it is the idea behind it. A uniform symbolizes success, power, drive, status, money, etc. Attractive traits.
