Well, honey goes through multiple different changes to get to to it's final form. It comes from the nectar of the flowers that become fruits eventually, but it's even more complicated than that. I wouldn't categorize it as a vegetable or a fruit, but as a sugar.

flowers produces nectars. bees have glands which secrete an enzyme. when the bees collect the nectar, it is then mixed with the enzyme in the beeβs mouth. once the bee gets back to the hive, they drop the nectar into the honeycomb.
It's actually a mixture of sweat and spit leftover after a bee has munched on flowers for a while.. simply spoken.

Depends on if its natural or artificial honey, natural honey is neither while artificial honey is essentially high fructose corn syrup with "honey flavoring" so i suppose it could be considered a vegetable product.
