You feel bad because you know you hurt a genuinely nice guy's feelings. You didn't mean to, and you're not a mean person.
We all go through it. If he had been a jerk, you wouldn't have felt bad about turning him down. There are lots of nice guys in the world, and you don't have to date someone simply based on the fact that he's nice, It doesn't sound like you're being too picky, you just don't like the idea of hurting people's feelings.

Using "what if" isn't practical because then there'd just be too many different roads you could go down and it gets too hectic!
