The answer is don't text too often, but also don't text too seldom, lol. I'm not sure there are any "rules" here, it's probably the same as any other guy. Just keep in mind that a man who is older probably spends a lot of time working so don't expect him being overly responsive to texts when he's working. Texting also didn't really exist where guys our age were young so he might not enjoy spending too much time texting.
There are lots of decent men who are older, you'll get the paranoid hysterical people telling you "OMG an older men he is a child predator / pervert!!11!11" but really that's silly, yes there's a risk he's a perv but you'll be able to tell that by going on a few dates with him - just like you figure out any other guy seems legit or not.

They're more straight forward, mentally competent, less emotionally troubled and better economic standing. I'd say it would eliminate troubles you would potentially have with typical kids.
I thought guys that are like 26 and up still act like kids. I knew an older guy that was like that age and even though he came across cool and mature and gentleman like and was gorgeous. He was still a child himself. :/
