Depends on the guy... if he is a player, then he's texting at night to fill up time, flirt, sext, etc usually. If he's a genuine guy who might like you, then it's probably because his day was busy and he was thinking about you by night time. Even then, usually a guy who likes you will have texted you during the day time at least a couple times in the past. Players never text girls they care about during the daytime...
From what I know from old relationships and my guy friends, the guys who are decent and are only going after one girl, they do think about the girl they like before falling asleep. If he's never talked to you before and is crushing on you, he'll be thinking about you before falling asleep and thinking about how he can talk to you. If you and the guy do talk, then there's a good chance he'll text you at night before he sleeps because he was thinking about you and cares.
If he's older, like a guy in college, then he's probably busy during the day and texts only at night. Most guys aren't into texting during the day. As long as he conversations at night aren't too sexual, then the guy genuinely likes you. If the guy tries to get sexual too quick, he's probably a player.

Well to be honest. Depending on what the guy does on a regular... how busy his schedule is an what he talks to you about at night when he texts u is what will tell you exactly what his behavior means. Normally a guy that really likes u will hit u up on average at least once or twice if not more earlier in the day. An then in the night before he goes to bed. Usually because he genuinely cares. But if he hits u up at night tryna be sexual an naughty? Chances are he is quite temporary in ur life n pretty much not worth it.

Your the last thing on his mind. When a man fulfils what he needs to do in life he seeks the things closest to his heart to make him feel like it was all worth while.
Someone once said to me 'Get the woman in the evening and at night, if you start engaging in the day too soon it becomes friendship.'
I personally think that's utter crap but some men might not think that way.

Well, lets just say that he likes you :) If a guy after having a hard day at work still makes the time to chat with you at night, then it's pure common sense. Guys are lazy creatures of god's creation. If one makes time for you like that, then he is indeed somewhat interested in you. Hope my answer helped.
