It's a guilt thing. If HE sees the ring, chances are he'll feel guilty about what he's doing. By taking the ring off, he's can be "single" with the mistress. Question is, why does the mistress keep seeing this married man if she knows he's married? She's just as at fault as he is, regardless if she knew he was married when the affair began, she knows now, and she keeps seeing him.
Either he doesn't want her to think about it or he doesn't want to think about it. That's my best guess.
Might feel bad for wearing the ring that connected him to her while f***ing someone else.
Simple really the ring is a symbol of his marrage and he is leaving that behind while with his mistress. Unless it is somehow a turn on for him and his mistress that he is married it is very unlikely that he will ever intentionally keep the band on when he is with her.
