Being an artsy type myself, I'll say that it could be one of a few things:
He was bored.
He had a subject (you) in front of him and he drew what he saw.
He likes you and decided to draw you because of this.
If you like him, I would bring it up playfully. You may find out the exact reason why he drew it. (you could also use art as a topic for conversation between you two.)
If you don't like him as more then a friend, leave it be. Like you say, he isn't "odd" so he doesn't have any negative reason for drawing you, but if you don't like him, then it's probably better that you don't find out if he likes you or not. Just asking about a drawing he doesn't know you know he drew may make things awkward or make him think you like him (because you pay enough attention to notice his "secret" drawing of you)

It could be for a number of reasons, and only way for you to truly find out is to engage him on the drawing.
I'm going to go with the theory that he's a little into you, so I say start a playful conversation asking if there's more pictures of you in his portfolio or if he just stopped with one.
