How long will it take to lose the 25 pounds and how to keep it off?

If I eat literally as little as possible to keep my body running and start rigorous weigh loss exercises what will it do to my body? I am only going to do this until I reach my target weight of 115 from 140 and how long do you think it will take for me to do this if I exercise daily for an hour or two. Also how can I keep this weight off once I lose it?
