Gatorade, Smoothies, Milkshakes, Applesauce, Pudding :S, as you said potatoes (can be baked also though) and soup, Grits (I really like em but some people don't, just butter salt and pepper and occasionally an egg) cottage cheese, soft fruits like bananas, eggs, and that's all I got... From experience you probably won't be super hungry at first just kind of thirsty. And after a bit you should be ready for solid foods again :)

It's really not as bad as you are expecting it to be. After a week of favoring that spot on your mouth, you will notice that mild pressure of chewing soft, manageable foods is actually kind of pleasant in a "hurts so good" kind of way.
Just make sure to keep it flushed out with salt water.
Ugh, I have an impacted wisdom tooth... It hurts :-(

dont go for solid food... take semi solid and liquid food more... avoid too much spices... and clean your mouth and throat with Luke warm salted water to avoid bacteria contamination
i never had wisdom teeth... but i guess this won't change your eating habbits... no?
