Vegetarians don't eat meat products and fish. Vegans don't eat ANYTHING that comes out of animals, they don't eat any animal by products.
Vegatarianism is pretty much just a diet. Sure, many vegetarians are against all the animal cruelty and stuff, but the cruelty doesn't end there, animals are still treated horribly, for example, to get milk. So vegetarians can't technically call themselves ''huge animal lovers''. On the other hand, veganism is a full on lifestyle, it's like a religion to them, that's why they are often judged and misunderstood, they're just really passionate about everything that has to do with it.
I am vegetarian and have been for like 8-10 years, I don't remember when exactly I stopped eating meat. I know that slowly, gradually I just stopped liking different meat products, until I didn't eat any at all. I guess I part of me stopped liking the taste but the other part was probably the sensitive kid in me that felt sad when learning where that meat comes from, that they're murdered animals I was eating. Now I know that I couldn't eat meat even if I wanted to, my organism just wouldn't accept it. And even if I could, I wouldn't cause I don't want to eat animals anyways.
All that being said, I'm not a crazy vegetarian or anything, I never have and never will force what I believe down anyone's throats. I respect everyone's choices just like they should respect mine. ✌

I wouldn't say there are "belief" differences, but more that there are educational differences. People go vegetarian because they care about the animals, their health, and the environment. People go vegan because they learn about the horrors of the dairy industry and realize that dairy is even worse for the environment, even more horrific for the animals, and even worse for their health than meat is. I was vegetarian for about four months before I went vegan and I've been vegan for almost a year now. At first it was because I wasn't aware of the facts and then it took me a little while to transition into veganism. Personally, I don't understand why people go vegetarian and stay vegetarian, since it was more of a stepping stone for me. It's like someone giving up alcohol but continuing to use cocaine, I don't get it. The hardest thing about being vegan is living in a world that doesn't understand or promote veganism. Eating out with friends is difficult, options are limited, people are judgmental, every meal turns into an interrogation, being introduced as 'the vegan' and not as Kristen, and pretty much just being so painfully aware of all the pain and suffering in the world and being sad about how nobody cares. So it's not the lifestyle that's hard, it's pretty much the people around you who make it hard.
I'm a vegetarian. I have been for about 5 years. At one point I was vegan and I'll probably go back to it eventually. For me being vegetarian was easy. Vegan is harder, but mostly because the rest of the world expects you to eat meat and being vegan can be very inconvenient. My reasons were mostly animal welfare. Vegetarian/vegan diets are also generally better for the environment. From what I've seen a big difference between vegans and vegetarians is that to many vegetarians it's just a diet. For vegans it's usually a life style. The two biggest reasons I've seen for people being one or the other is animal welfare or health. Often it's both but animal welfare tends to be stronger on the vegan side of things.
Vegans - zero animal products or derived from animals - everyone is COMPLETELY plant based.
Vegetarians - Animal by-products consumption permitted - e. g - diary and eggs. A sub-branch of that is the lacto-vegetarian which even eggs is not allowed.
Anyway, I'm a omnivore with a slight veggies leaning. Mostly circumstantial over anything.

Vegetarians eat honey, milk, cheese, eggs. Vegans don't eat any animal products. Vegetarians believe it's ethical and good enough for them to just not eat meat, while vegans believe the best way to avoid animal abuse is for them to not be used at all. I've been vegan for a little over a year. I initially did it for health, but discovered other benefits later.

Vegetarian - they eat milk products
Vegan- they don't eat milk products from animal. THey Eat milk products but from plants like soya milk...I am not a real believer, I do it because I feel fit and healthy by it. And unfortunately, I need a piece of meat every one or two weeks because my body does not accept vegetable iron.
Vegans are the extremists and vegetarians are just regulars, other then that I don't know but you can keep em both, I'll stick to eating meat.
