just learn to mix the vegtables in with the meat and tortila and rice and beans. Drink more water than you think you need its hard to get over hydrated easy to get dehydrated. Just balance what you eat out. 15 -20 minutes walking also can help with stress if your lazy just jogging for shot periods once or twice a day can help with weight control.

I guess the “easiest way” is to ask someone to do it for you but nobody knows your specific nutritional needs as well as you do yourself. I would suggest you take a class (one semester) and work out your own diet plan. Sure it will take longer and be more work but you will have a plan custom made to your needs.

just eat less. Have portion control. I don't think there is anything in mexican traditional foods that's too unhealthy for you.
