Whats the easiest way to make a healthy diet plan if your hispanic?

I am hispanic and I don't know how to cook. Honestly, I don't mind learning but I can't figure it out.. There so many rules in eating healthy but I am hispanic so I still eat foods that aren't so healthy. Like eating to much read meat with white rice and toritia. How do I make recieps that are healthy but are what I always been eating like stay traditional. I am willing to try vegtables even if they gross me out but it better than suffering.
