I'm vegan so i can't really eat most of the food and have to make everything myself, which mean's i have less options, which mean's less food, which mean's i stay in my daily recommended amount of calories for the day ( though i don't count ) and don't gain weight.
Eat healthy foods, and if you want something that's not, have a small portion, just don't overeat and you'll be fine. One " bad " meal will not make you fat, several bad meals everyday for a week or two will cause a slight weight gain. The people that gain something crazy like 20 pounds over the holiday's are most likely eating WAY WAY WAY to much EVERY day, not just one or 2 time's a week.

I just make sure I don't over eat and I stick to 5-6small meals a day. Always drink a couple glasses of water before you eat the huge holiday meal.. and top it off with some green tea at the end. To make it even better add lemon to your water.
There are consequences to your actions.
Goal yourself and remember why you're doing it. If you slip up, you better make it up.
