In a "Weights" class, any advice on diet?

Okay, so im taking weights as a class in high school. Coach is pretty tough, & I respect him & he respects the girls in the class too.. He knows i work really hard out of all the girls in the class. He kinda put me on blast. Anyway, my parents are hardheaded, & sometimes I don't have the right ingredients for my diet etc. i know what to eat and stuff but it's difficult to eat right, when you aren't provided the food that is necessary. My parents don't understand that. & not to offend myself or anyone i guess. But i live in a Hispanic home, so sometimes the stuff i eat, I don't want to eat because its bad for the anatomy. & my parents don't understand that i want to eat right. But I can't eat right if we don't have proper ingredients.. Ya know? I would try to cook my own food but my family would criticize me if i 'make my own food because 'their' food isn't good enough' kind of thing. & they would say "Oh, so now you want to eat healthy? All of a sudden your on a diet? Don't tell me you want to go to the gym & look like a man now do you?" The thing is, my folks don't know i lift weights in school. & if they did, mom would probably kill me... So my question is... What do i do about my diet? I have water, and a few veggies but not enough veggies... Its not... Enough... Healthy food... Is what im trying to say... & i was thinking of meal plans but thats kinda difficult... So what do i do?
