For me it was the opposite. 6th and 7th grade, I was criticized for being "skinny" and "weak". I wasn't actually weak, but they attributed my thinness with the fact that I had no strength, which I later went on to find was utter bullsh*t.
I was quite skinny though and it did get to me. I guess they just did it to make themselves feel better. The irony was that a lot of the people who would pick on me, were overweight people.
Seriously, I guess the only reason people do it, is so that they can either feel better about themselves by putting other people down, or simply so that they can feel brave. It's stupid either way. I still believe the best comeback for fat remarks, is to just accept it and say:
"Well, I can always lose some weight. You, however, will always be a douchebag with an ugly face."

Excessive fat is unhealthy (joint strain, heart/liver problems etc). So it could be concern that someone they care about could feel better / live longer if they changed a factor that the thinner person believes is completely within the control of the fatter person.
There's research to the effect that fat levels aren't completely controllable, but this is unlikely to seem convincing to someone who either through iron self control or natural factors is thin.
I think people choose too criticize about weight or any other issue someone may have is because they are insecure about themselves so if they belittle someone else it will make them feel better about whatever issues they might be hiding, basically a self esteem booster.
People do it to make themselves feel or seem superior. When in actuality, its only highlighting their own flaws.

Why do people like to criticize people who are thinner than them?
because its their fault, it shows they are lazy and just eat sh*t all day
it satisfies their ego to crack on others
