This is just one of those things you have to be persistent about. She might find it annoying at first but she knows deep down that you're coming from a good place and exercising is a good thing. Explain to her that it is something that you love and you wish she would give your passions a chance because they are really important to you. You're really just going to have to drag her to the gym.. its a pain at first, but once you guys get into a routine it won't be that bad.

Honestly, I can see where she's coming from. The things you do with her are relaxing. The things you're asking of her are not. I would NOT enjoy working out, even if it was with my boyfriend. I'd try, But I probably wouldn't like it.
Your best chance is to do something fun, like a dance class or a sport. Get her back into judo. These things are physically challenging, but fun and not WORK like exercise is (if that came across well).
Workouts are not for everyone. Open up and offer to do something else fun that includes exercise, bike riding, skating, hiking, kayaking, swimming, dancing, climbing gym, tennis, golf. Pick a very easy level and don't obsess if she doesn't like one.
Drinking and clubs all the time, does infer that drinking alcohol daily is a habit. See if her interest in some physical activity can match yours, but don't limit yourself.
