I have something I make every Christmas, and also the past fourth of July I call "Peanut Butter Butterscotch Thingies". Yes, I chose that scientific name because the person I got it from also didn't know what to call them.
I have the recipe posted on Facebook, I will copy and paste it here, hopefully the post won't be too big:
Here's what you need:
Bag of Butterscotch chips
Peanut butter or bag of peanut butter chips (Nonnie used the former, I use the latter as it's easier to stir)
Unsalted unshelled peanuts
Chow Mein noodles
A double-boiler or similar arrangement with two pans
Wooden spoon (to mix it with)
Small spoon (To measure out pieces)
Wax paper (To set pieces on to dry)
Very strong hands (There's a LOT of folding of the ingredients)
Here's how it's made:
1. Start up double-boiler with boiling water in the outer pan.
2. Mix in ingredients one at a time, starting with chips, then peanuts, then noodles.
3. Fold them continuously until chips are completely melted and everything's mixed up well. (This will take about 10 minutes)
4. Measure out pieces by making small scoops about the size of the small spoon and put each piece on the wax paper.
5. Let them sit to dry on the wax paper (if you have pets like cats and dogs, I recommend covering them while they dry so that a mess isn't made).
6. When they are dry, remove the pieces and put them in storage or enjoy immediately.
These sound weird but are actually quite tasty.
