All those things happen to me too. The anxiety and being super excited is as a result of the caffeine high. Caffeine actually 'energizes' you by stimulating the release of adrenaline, so after you cup of coffee you're actually on an adrenaline high. A classic symptom of being on that sort of high is anxiety and an almost manic/moody stage. It definitely is normal though differs slightly from person to person. If you want to manage those sorts of side-effects if you will of coffee, maybe manage how much you drink. One semester I would be running on 3-4 super strong, black coffees a day and more during exams, which in left me in reality as a nervous wreck. Now I don't let myself have more than 2 per day and it's much better. :)

The caffeine in coffee causes a kind of "legal high" which is what gives you the energy and keeps you awake. When the caffeine wears off your energy levels wear off and the good feeling you had will disappear, possibly causing the mood swings. Before a work-out session maybe try an energy drink (though many of these contain caffeine too) or something like a chocolate bar, basically something that contains sugar and/or glucose to give you energy. if you still fancy a coffee buy a decaffeinated coffee which should make a difference.
You are probably sensitive to caffeine. Many people are very sensitive to stimulants.
