What causes the massive weight loss you see in people on this diet?

I knew a 50 year old woman who told me she lost 80 pounds in one year from becoming diabetic because after that she could only eat meat and vegetables.

Since I needed to lose weight for my vacation to Alaska in June I tried doing the same thing she was doing. I've lost 5 pounds the first day and I know it's mostly water weight but at least 1-2 pounds of that is fat.

Today I cheated - I had a coke for breakfast but yesterday I also cheated on my meat and vegetables diet - I had some grains - and I also had some decaf coffee - combined with an overdose of bananas - and I still managed to lose 5 pounds. What do you think causes the weight loss? And how will I maintain weight when I get to the point where I no longer want to lose weight?
