I would explain to him that you falling asleep has no bearing on how the conversation went. In other words, you didn't fall asleep because you got bored talking to him (or at least I hope that's not the reason you fall asleep).
If this happens around the same time, you can suggest to him that you two text each other an hour or two before you actually fall asleep. That way you have an opportunity to say goodnight to him.
notice what time this happens (if it happens around the same time) and just in the future tell him goodnight...even if you end up being awake for the next 15 minutes after

it honestly sounds like an insecurity thing on his part.. if you're tired you're tired, and if anything it's better that you do that because you're texting him til you fall asleep, not telling him you're gonna go to bed then try to go to sleep. you know what i mean?

Sleep is kinda part of the deal, if your boyfriend is not a complete idiot he will understand.
Just text him you are tired and need to sleep.
And then turn your phone off.
