You want to speed up as they are getting close to cumming, but then slow down as they actually cum, basically in rhythm to the squirts. Keep some pressure on it after he finishes, but don't really 'stroke' too much at that point, just slowly for 30 seconds or so. This is for the shaft of the penis anyways, which can handle it. The tip can be way more sensitive, and you want to leave that pretty much alone completely once he starts cumming. Stroke the shaft as he is actually cumming, don't play with the tip.

You stop (or at least, slow way down and be more gentle) after he's COMPLETELY finished ejaculating, but NOT immediately after the first shot, because THAT is a HUGE no-no - it's super-frustrating and often even painful if he doesn't get a full ejaculation, and for that, you need to keep going until he's done, plus maybe 5-10 extra seconds.
