How to convince my wife to sleep with another man?

My fantasy is for my wife to go out and get another guy and bring him home and have sex with him.  She said she would never do it with a stranger but she would do it with a guy she went to high school with.  I want her to pick up a guy because I believe she thinks she can't but I know guys look at her and would take her home in a sec if they could.  I just want her to have a one night stand but I don't know how to convince her to go through with it.

Make a deal with her to go to a bar with her where she will flirt with other guys. The first time it is just to flirt while you watch. The first time leave it at that. Next time get her to go a little farther, maybe give a guy a bj in the restroom or in your car in the parking lot. Then get her to go the whole way.

I am 55 my wife is 26 and I gave her permission should the get the urge to go for but she must tell after she has had the guy. When she wants to see her boyfriend she just says I will be late from 'book club' and that's the signal if she is going to get laid.

No, you don't want to actually do that. You are fantasising about it, but that doesn't mean you have to go through with it. Reality has a bad tendency to bite back. So my sincere advice is that you stay content with your fantasy and leave it at that.
