It world be more rude to go to the interview and then still not take the job.It's perfectly normal to be applying for multiple jobs and being in different stages of the application process. No one can blame you.What if you only apply for one, skip another one because you are currently applying, and then don't get the first one? Suddenly you lost your chance to both jobs.Don't sweat it, any same person and company will understand this. And the other ones you don't want to work with/for anyway.
They're talking to multiple possible employees. It's perfectly reasonable to expect that you're talking to multiple possible employers. If you've found a job elsewhere, it's actually courteous to let them know you have so they don't spend any further time considering you for the current position.
I agree with @wankiam, if you are upfront and professional with them then it's fine. Tell them you have already accepted another job but thank them for the interview and their time in reviewing your application.
