I have two associate degrees, but I didn't really use them. So I can only answer the pay part very generally.
An associate degree is obviously not going to pay as well as a higher degree in the same field. However an associate degree in a good field will pay better than a higher degree in a crappy field.
Community colleges are just that, community. They are more closely geared toward the local job market than full universities. They keep in close touch with local companies, and get feedback on what is needed locally. Not just in terms of degrees, but specific things the local businesses would like their employees to know. When a company says they want "this, this and this", the college will ask how many people they will hire if the college teach those things. It's not unusual for community colleges to change class content, or even offer entire new degrees for this reason.
As such, this is very localized, and you need to check both the local college and job markets. Talk to the teachers and ask them about job availability and pay. They are usually in contact with past students and get feedback from the students as well as from businesses.
Also, look at how well you can matriculate from community college to a full university some time in the future. This can vary quite a bit by state, major, and specific college. So again you need to check locally.

It all depends on what you are going back to school for.
Look up the average salary of your field and what the educational level is.
Also look up how much that degree will cost you time and money wise.
Other factors: what is the local job market like, how much will you make at the local level? What are the long term prospects of your field? What is the turn over rate?
Associates degree in the USA gets you anywhere from $14-25 an hour. I know people who make more about $37 an hour but they have over 25 years in their field. Bachelors I’ve seen anywhere from $14-60 an hour. I work in lab and have my bachelor’s I make $57 an hour In California
