Um, you don't really need to lose weight. You're right in the healthy BMI range. You sound like an Olympian to me.
Do you want to tone your body? Your body does need to rest to rebuild muscle.
A good book for you may be 'The New Rules of Lifting' by Lou Schuler and Alwyn Cosgrove to give you some perspective on maybe what you think you're doing wrong.
Personally, I think you're working out TOO much if you want to lose weight.
Interval training may work for you (hard for a minute or two, moderate for a minute or two, repeat).
