I assume you're speaking of the lamb rib chop from the lamb rack. This cut would normally be pan seared in a cast iron pan, high to sear and than finished in a medium oven or grilled on high heat to get grill marks and sear then finish on the cooler side of the grill using indirect heat. Most important is not to over cook as you want this to be medium rare, nice and pink in the centre.
I like braising my lamb in a lower setting to make it soft and tender.
