What sauce should I eat with salmon croquettes?

This will be my first time eating salmon croquettes and I'm not sure what condiment would taste right with it. Any suggestions?

    A simple squeeze of fresh lemon wedge would be enough.

    I would probably make my own tartar sauce, though. I wing it every time, so I don't have a formal recipe. It's basically mayo and finely diced garlic pickles. I always add plenty of fresh ground pepper, a bit of pickle juice, Tabasco, and either a finely chopped bit of onion, scallion, or chives. I have a ton of chives in the garden from April - Nov, so I use a bit of that.

  • I'd use a simple dill sauce, dill pairs with salmon wonderfully. All you need is 1/4 C of sour cream, 1 tsp of dill weed, 1/4 tsp. of garlic powder & sea salt to taste. Ad a good, well chilled Chardonnay or Pinot Grigio and you're good to go.
