What are some healthy, but simple chicken dishes that I can make?

I'm a huge fan of fish, but all that mercury and garbage that's flowing in the water... I don't know. It's getting me to second guess my beloved seafood. I know there can be downsides to chicken, but I can't do beef. So chicken it is. Are there any healthy dishes I can make that won't cost much (ingredients wise)?

  • Margarita chicken is pretty good. Salt and pepper some chicken breast or tenders and saute in olive oil. In a little sauce pan add brown sugar and margarita drink mix (can be the frozen can kind) together until its the sweetness you want, put the chicken over rice of your choosing (I like zatarans carribean rice) drizzle sauce over the chicken and rice and you're done
