It really depends on what you're using it for. Parmesan is nice for Italian dishes and also nice on some salads (like Caesars salad). Mozarella is good for pizza, good for serving with tomatoes/olive oil/balsamic vinegar. Cheddar can be used for many different things, cheese scones, cheese on toast, cauliflower cheese, sandwiches, etc.
I like the subtlety of mozarella, but cheddar is perhaps the most versatile even though it's not that interesting in itself.

Cheddar... But only a little - I can't eat a lot of dairy, unfortunately, but I adore it...
But all of those are amazing on totally different dishes, of course.
Cheddar is the only one that's amazing all on its own.
Mozzarella with tomatoes or on pizza, parmesan on spaghetti or any kind of pasta...
