Don't listen to the milk people as milk has a lot of carbs.
Okay, you want simple but delicious foods. What I would strongly suggest is boiled chicken and vegetables. You need to boil the chicken and vegetables in chicken stock with about 2% of salt (2% vs total weight).
Second you will need sauces. Good sauces put you back into the delicious slot. Teriyaki, garlic sauces... etc. Pick a Chinese or Asian supermarket and go through their sauces.
Lastly, don't be afraid of fat. As long as it's not sweet then you are okay. Just don't over do it. Cheese, cream and such as good. LOW FAT milk is not!!! Eating fatty food will do little to your weight if you are strictly lowering your carb to the minimum.
Also, avoid low fat stuff. A lot of them just pack carbs and sugar into them. The only thing you should care about is the carb.
