Baby back ribs, brined, then rubbed with a spice rub and left wrapped in plastic in the fridge for 24 hours and then cooked low and slow until the meat starts to pull away from the bone!
Try not to do red meats anymore but my favorite is bacon and I mostly eat chicken some fish.
Lamb, only problem is it costs an arm and a leg here
