I use very little oil in my cooking, and I choose the oil I used based on the flavor I am looking for in the finished meal. Olive oil is my favorite for dressing foods when they are done cooking, or foods that won't be cooked.
I can't even imagine not using olive oil. Mostly for salads, but also for cooking. For some salads I use pumpkin seed oil. It's amazing.
When it has to be neutral I use sunflower oil for cooking, or peanut or sesame oil when I make something Asian.
