Put it in a pan with a TINY bit of vegetable oil, bake it for 30-an hour on low heat, occasionally stir n mix

One of the weirdest recipes I like is a recipe my mom handed down to me called "cinnamon chicken". It sounds disgusting (I wouldn't blame you lol), but it's surprisingly tasty (for me anyway)...
8 chicken thighs (about 1 1/2 pounds)
1 1/2 tablespoons of oil
1 medium onion, chopped (1/2 cup)
1 clove garlic, finely minced
3/4 cup of orange juice
2-4 tablespoons raisins (to taste)
1/3 cup slivered almonds
1/2 teaspoon of ground cinnamon
1/8 teaspoon of ground cloves (not too much!)
Salt and pepper to taste
Combine cinnamon and clove in a small bowl, sprinkle evenly onto chicken thighs. Heat oil in a large skillet and cook chicken slowly. Add onion and garlic and continue cooking until the chicken is golden brown all over. Drain off excess fat. Add orange juice and raisins. Cover with a lid and cook about 15 minutes over medium heat until chicken is tender. After finished cooking, add salt and pepper to taste and sprinkle with slivered almonds on top.
Serve over this rice dish...
1 cup rice of your choice
1 1/4 cup of plain yogurt
2-4 tablespoons of chopped pickled jalapeño peppers (to taste)
1/2 cup of cubed cheddar or Monterey Jack cheese
Make your rice (you do know how to make rice, don't you? lol), after rice is cooked, add yogurt, chopped jalapeños, cubed cheese, a little salt and black pepper, and stir throughly.
Add the cinnamon chicken over rice and enjoy! 😊

One of my faves to make is roasted asparagus and is really easy!
Preheat oven to 400.
Generously rub stalks with olive oil, lemon juice, salt and parmesan cheese.
Lay evenly on a baking tray and bake for 25 mins.
They're soooo good!
