Mozzarella with a touch of provolone for pizza; "singles" slices for grilled cheese sandwiches; cheddar for my broccoli and potato soup; ricotta, cottage and swiss for lasagna; parm reg for salad garnish.
Extra sharp cheddar. I occasionally like to punish the taste buds. :)
