Im a big fan of Kobe Wagyu Ribeye s which i order med/rare.
You can touch a raw cut of the great meat and just your body heat begins breaking down the fat in the protein.

The steak in the picture is the perfect colour for my taste. Agree with other person that says breed and cut are paramount. My favourite cut is the ribeye and I don't like a ton of seasoning, just what's required to highlight the flavour. Sauces are sacrilege.
Steaks never did anything for me. I've never figured out why people make such a big deal out of them. I'd literally rather eat a hamburger.
But yea, if I'm going to eat a steak, I'd prefer it fairly rare.
