Salmon, sautéd in butter and vinegar and seasoned with dill and herbs de Provence. Serve it up with couscous, a vegie, and a nice blush wine. Sometimes I like salmon with a Hollandaise sauce.
I also like a dish I call Chicken Mc Q. It's chicken in a creamy parmesean cheese sauce and rice pilaf. Paired with a chardonnay.
And of course every chef should have a solid steak and potatoes base.
