I rarely eat at midnight but when I do, I do it with awesome psychology going on
I think about where the food is and which area would cause the LEAST sound for opening, I then think about which food would cause the LEAST sound when eating.
This often results in eating from the box of bars in a seal box in the larder. This box has a variation of different bars and they are all easy to open with little to no rustling ;)
Cashews are good, or a small amount of quality chocolate.

Peanut butter, banana, honey toast or cereal if I don't have what's needed for that.
Leftovers, goldfish crackers, apples or whatever fruit, cheese.
