Is it rude to ask my boss why he always schedules me closing shifts?

No just ask him or walk in with a new availability. Might just go by seniority as well. But Id have my new availability ready for after the talk and if he still doesn't accept it then if day its time to look elsewhere

It isn't rude, but he may take it that way. You did tell him that mid works best for you and he ignored that, so you have a right to know why you're being scheduled for shifts that aren't ideal for you.
