If a woman rudely puts her hand on a guys mouth to get him to stop talking (this is assault) is it ok for him to punch her hand away very hard?

I'm sorry, maybe I have the definition of what "assault" is wrong, but by no means is a woman putting her hand on your mouth assault lol. Sure it's definitely rude of her to do so but if she's not slapping your mouth, she's not causing you any bodily harm. Unless you were in serious fear that you were going to suffer physical harm from a little lady putting her hand on your mouth. Even if she did slap your mouth let's say, "punching her hand away very hard" is still an overreaction in my opinion, just push her hand away, push her away, or slap her hand away.
That would be an escalation and unwise. Match intensity. If her actions couldn’t cause you harm don’t cause her harm. No jury will take your side if your defense for punching someone is that they gently touched your mouth. However, you are correct. That’s extremely rude and you’re well within your rights to push her hand away.
How is the placement of one's hand upon the mouth of another, in order to get that person to stop talking, classified as "assault"? That doesn't make sense.

If you feel that your not strong enough to break free from this little woman’s hand on your mouth then you must punch her to save your life... punch her. Just imagine it’s like when a child does this to there dad.
