Protein - chicken, beef, fish
Carbs - whole wheat pasta, brown rice
Oils/healthy fats - olive oil, canola oil, peanut butter, nuts
Veggies - green beans, peas, broccoli
Dairy - yogurt, cottage cheese

You can judge how much he needs - if he's skinny, smaller portions. Built = bigger portions. Fat, overweight = oh god, not too much food he needs discipline
He might need certain foods if he is deficient in nutrients.
Does he work out at all or he tends to stay in office the whole day?
It just depends on the life style of his too.
Same needs as anyone else, healthy food. Nothing in particular unless he has problems. Fruits, vegetables, protein, not a bunch of fat and junk.

This is something you ask him during the interview or play by ear. Being a banker doesn't tell us anything about his diet restrictions.
He may have certain goals and it's up to you to know how he can achieve them. You are afterall, trained from what I can recall.Same for anyone really. I balanced diet of micronutrient rich food. Just make the portions a little larger since he's a guy.
Or are you looking for something more along the lines of a macronutrient breakdown?I don't quite understand... Why not just discuss it with him? I'm sure he'd take it like you care about doing your job right (and if not, then it's anyway not a long-term thing).
Depends massively on his exercise level. If he's serious about it he may know what macros he's wants when and can provide them.
It varies so much you don't have enough to go by... does he work out, how much does he weigh? I go through 4000+ calories a day but I workout and I'm bulking. A lot of factors are needed lol.
