Merry Christmas or Happy Holidays?

With people becoming more culturally sensitive, 'Merry Christmas' is something most people are not allowed (or discouraged) to say in areas of profession. Take school for example or a large company. How do you feel about it and which do you prefer?
Personally, I prefer 'happy holidays'. Not everyone celebrates Christmas and I mean I'm not even Christian - I'm an atheist. Not to mention the fact that Christmas is a pagan holiday and Jesus was likely born in the spring/summer. I just feel that saying *only* merry Christmas to people is rude because you don't know what they believe in. However, to family or friends it's okay to say whatever you want.
