This one is simple but delicious:
"Porcupine" Meatballs (the rice makes them look like a porcupine; no actual porcupines are used!)
Ingredients:
1 box Beef-flavored Rice-A-Roni
1 to 1.5 pounds of ground chuck hamburger (30% fat)
1 egg
1 tsp salt
1 tsp black pepper
2 tblsp Kitchen Bouquet or similar seasoning/browning sauce
3 cups water
Line a cookie sheet with a layer of foil.
Add ground beef, rice, salt, pepper, and egg into a mixing bowl (set aside "flavor packet" from Rice-A-Roni) and mix well by hand.
Form mixture into meatballs about 1.5" in diameter and place on cookie sheet, evenly spaced.
Brown top and bottom of meatballs using oven broiler (turn them over once the top side is brown). About 5-7 minutes per side, depending on the oven.
From here, you have two options:
Option 1: using a large skillet or pot, add flavor packet, Kitchen Bouquet, and water, stir well, then add meatballs.
Simmer on low for about 45 minutes, turning over meatballs every 15 minutes.
Option 2: using a Crock Pot, add flavor packet, Kitchen Bouquet, and water, stir well, then add meatballs.
Cook on High for 4 hours, turning over meatballs once or twice.
Simmering on the stove will give you firmer meatballs and is faster, while a crock-pot will make meatballs more tender.
Best served with mashed potatoes and your choice of veggie.1|00|0
