Symbolic? Why not?

in past millennia where human being had not developed his language to the "logic" level yet and used to use "symbolic language"
That's why intellectuals tend to interpret prehistoric myths. For example:
In Gilgamesh the goddess Mitra breaks the neck of an ox and a wheat grows from the oxs dead body.
Intellectuals believe its one of the most glorious evidences of prehistoric human language about when its life style changed from animal husbandry and wandering tribes to habitation and agriculture.
They don't try to find a cow which can grow wheat when its dead!
Now... Tell me what do you think about Adam and Eve? Do you think we must seek two real humans in history?
Why can't this be a symbolic story when it comes from that era of human history where they were using myths to explain phenomenons?
Symbolic? Why not?
