Not sure I fully understand the question - and this is just a hunch - but it is much like the rest of porn - fantasy, taboo, etc. In this incest with a stepparent or sibling is a sort of "safe" incest. After all, in legal terms a step child having sex with a step parent might be incest, but in biological terms it is not. There is no genetic connection between the two people.
That a man (or woman) might then be sexually attracted to a step parent - in evolutionary terms - is not a great surprise. Indeed, even incest itself may have some instinctive appeal. Science is increasingly accepting the concept of "genetic attraction." It is especially common where a parent and child were separated early on and meet - not realizing that they are related - decades later. They then become sexually attracted.
Suffice to say, as such episodes are rare, it is hard to develop sufficient data to scientifically affirm such a concept. However, there is at least some evidence for it.
Sorry to prattle on. It so happens that my girlfriend works in family law and policy and is involved in such issues and she will periodically bring home research on such things. In fact, I've even met an incestuous mother/son couple - she was expecting her son's child at the time. (They did not know that I knew they were mother and son.)
They were not what I expected. From NY, she was attractive and he was a good looking guy. Well dressed and well spoken. If I had not known that that they were mother and son, I would have just assumed that they were a regular couple unusual only by virtue of the age difference.

Porn producers are always looking for a new category that will draw new interest - you can only have hot naked girls bang the pizza guy so many times before people want something new - and there were a handful of 90s (female) porn stars who are in their 40s now but wanted to keep working, and there were only so many "MILF/mature" movies being made and bought (not enough for those women to make a living), so they came up with the incest roleplay idea to justify putting them in movies with younger actors, and it worked - people bought it, and then everyone jumped on the bandwagon because it was a new, successful category. The theme expanded to older men with younger women as well, which has always existed, but this gives a semi-plausible reason for pairing them up.
It's all fantasy anyway - none of these people are actually related - but it sells because it's newer and fresher than the more common storylines. It may well get oversaturated and stop selling at some point, but, again, porn producers are always looking for new ways to grow their business.
Yes I’d say it’s a fun category, it’s freaky, taboo, some sub and dom undertone action going on there. I noticed is says “step” maybe that’s a line they are willing or want to draw to not be the type of incest people tend to snare at.
