I don't think I have sufficient experience to answer this. I haven't tried dating any Hispanic, for example, to even form some weak opinion. I have been across the world and dated a lot but I had a lot of gaps like with the gigantic Hispanic gap.
But maybe I have a small bias towards African-American women (not all, but certain ones). I think that bias came from my first girlfriend being black (she wasn't the first one I slept with, but my first girlfriend, and the first one I really loved sleeping with). As for why -- I don't know.
We're just talking one sample. I need to sleep with more African-American women to make sure that the pattern carries over. Maybe it's just because she was my first girlfriend. I did love her skin though. It was the smoothest skin I ever touched. I was disappointed later to find out that African-American women tend to use lots of body lotion because dry skin shows up more on dark skin like chalk. But later I was like, whatever, lotion or not, she had the smoothest and silkiest skin I ever touched. I couldn't stop touching her.
I realize "Hispanic" is not an ethnicity. I tend to, very crudely, use racial phenotypes as like a superset collection of categories to describe the various ethnicities within... like starting with "Asian" narrowing down to Indian, Chinese, Japanese, etc.
I'm one of those who doesn't really form a preference until I've tried something. But I have my limits, like I wouldn't have try to have sex with a guy. I'm pretty sure that wouldn't interest me at all. But when I was single I was open to trying all sorts of girls, all ethnicities, various body shapes, personalities, see what I like best.
I have huge gaps though. I never got to try to sleep with Hispanic (not due to lack of interest, but lack of opportunity), and only one black woman (although I really adored her). I mostly slept with white or Asian... maybe because I was biracial white/Asian mix, and I seemed to draw mostly Asian and white girls.
Among whites (which I slept with most besides Asian) I tended to click more with certain European ethnicities like French and Italian than American. Among Asians, more Japanese and Korean than Chinese or Taiwanese (although I did like a Chinese girl long ago quite well).
I might sound like a player and always get called that when I share these things but I traveled a lot for my work after uni. I tried to keep long-term relationships. With that first African-American girlfriend, I seriously wanted to marry her. She even talked about getting a passport to travel to Japan because I shared my dreams of returning here one day (this was in the US). But the following Christmas I called her to wish her a Merry Christmas after 6 months of LDR and she told me she met a new guy. Then I got jaded. And I tried that sort of thing a couple more times, always turning into LDR when I had to move, and after the third time I just gave up sorta... just have fun, you know. And maybe I got a bit promiscuous then. Whatever. It's like I thought nothing was gonna work out long run, so just have fun today and tomorrow and don't worry about the next month while moving all over the place and living out of suitcase.

Would have to mostly be black, white, and Middle Eastern. I really am not into Asian women sexually, it just seems kind of weird to me I think because they often times seem pure and innocent. Latinas aren't bad, but I'm not as crazy about them as I used to be.

Minority men face much more discrimination than white men. You are privileged because of your race. That is a fact. You do not face or experience systemic discrimination and prejudice on par with black men. To even say that you do is an insult.
That said, can white men be discriminated against? Yes. Do people make assumptions about white people? Yes. But it's not a lie to say that whites are more privileged or tend to be more financially well off because of racist policies instituted decades ago that prevented others from becoming fortunate.
It's the truth. The first thing I hear from others is what you've said: "I'm not rich. I face discrimination too". How likely are you to be followed in stores under the presumption that you might steal? How likely are you to be stopped by police officers for no reason at all? Or have the cops called on you for performing basic actions that others do? How likely is it that if someone saw a large group of whites that they would assume you're a gang, going to cause trouble, thugs? Do people walk in a different direction or move away from you when they see you heading towards them? I've seen this happen to minorities, especially black people.
I'm not going to argue. You shouldn't be judged of course. But that does not mean that you do not benefit from privilege and opportunities which others do not get to enjoy.
I agree about people assuming that all whites are financially privileged. It's not right.
You were followed because you look like a stereotype, which is wrong. I wonder what would happen if you wore a t-shirt, khakis, and scuffed Addidas? You probably wouldn't be. But black men who don't embody the stereotype of a thug are followed. It's not the same.
There is sexism against men. We might disagree on this point because men are more privileged compared to women. Something that is commonly brought up is how it's mostly men paying alimony. Men pay alimony because women are the ones who are more likely to give up her career and life to stay at home. This is actually a horrible decision for her because she ends up worse off after divorce than the man paying alimony.
I am not saying that you don't face any discrimination at all. I am just saying that there are people who are worse off and face much more than you do. That's all. :)
I want to be explicitly clear on this point because it might be confused. Men do face sexism. I feel though, that despite the sexism men face, you are more privileged than women.

As far as I'm concerned those things are such minor problems compared to sexual assaults and harassment

I agree that those are minor issues but even harassment is sometimes blamed on a woman because of how she dresses. There are men who have said that rape doesn’t exist because women have a natural defense mechanism for it.
I will say that men’s harassment and assault is not being heard because people are saying that he should enjoy a woman performing intimate unwanted contact on him.

I don't think I've got an ethnic preference. I've only been with white and Korean girls, but it's not for lack of want. I just don't live in a diverse place.

I prefer thin girls. Ethnicity doesn't matter, by itself, but it does tend to correlate to Asians, Philippinos, and Swedes. But other ethnicities can fit my criteria just as well - i. e. the girl in the picture is nearly ideal, in my opinion.
