What would you think of someone who wanted to wait till marriage to have sex?

I'd think: this is not the right person for me. Beyond that, it's their choice. I just think that, unless you plan to marry at ages that, by today's standards are VERY YOUNG, that it's an unrealistic expectation.

Now, keep in mind that for all of history through the 1960s, the vast majority of people got married and they got married at ages we today consider super young. In the 60s, almost 1/3 of girls were married in high school, and well over half were married before they were 20, to men who were, on average, about 2 years older than they were. This was the norm for centuries.

Today, though, 1/3 of people never marry at all, and this number is growing. And of those that do, more than half get divorced - and subsequent marriages have progressively higher rates of failure. But what's more relevant here is that the average marriage age for women has almost doubled, from around 17 in the early 60s to just over 30 today. That means more than half of the women who get married are getting married AFTER their 30th birthday!

The rule of remaining a virgin until you were married made sense in the time when girls married so young (usually still in their teens), because this wouldn't impact their fertile years, when they were most likely to conceive and have healthy children. But if you're a virgin into your 30s, you've missed 2/3 or 3/4 of your fertile years already, and are in the time when you're more likely to have children with problems - part of the reason why developmental problems have risen significantly over the last 25-30 years. Biologically, if you're going to have children, you should be having them in your 20s - and that doesn't mean at 19 and 364 days, it means starting at 21, 22, 23, and having them through your 20s. It's hard to do that if you don't marry until you're 31, and if you're celibate prior to that.

Obviously it's a personal decision and you have to do what's best for you, but biology isn't going to change to make your life choices more convenient for you. Knowing that, a smart person will structure their live choices around the biology realities that won't change, to maximize their opportunities and minimize the biological issues that would be working against them otherwise.
