Speaking on the behalf of the hetoro-men, a lot of guys think they can tell what a girl is like in bed or she is or isn't a freak. Which sometimes they're right but not usually because a lot of guys look for telltale signs to know if the inner-slut is there. Other times you see a girl and she seems like she'll be great in bed but turns out to be basic and boring. Nothing to her.
Girls are the same way. They think just because a guy sends you a big dick pic he found on the internet that he fucks good. Or worse, actually has a big dick and she can't handle it. So its basically a crap shoot for both genders, or genderless to be PC. The way to know is to do it. In my opinion the only thing that makes sex bad other than STIs and bad hygiene isn't placed on one person initially. Communication is the key to great sex. No one knows your erogenous places better than you so you have to speak up. There's no dead giveaways other than willingness to communicate and comply.

the main issue i have with the dancing thing is that i have the rythum in the bedroom department but have never been worth a shit at any sort of dancing. which is why i do not dance period, i get embarassed of what i see of my dancing. not what others think of it, just my own opinion of how my attempts look. on the flip side of that, i have seen dudes who can dance like a mofo but find out from multiple women that in the bedroom they have less rythum than a car crash. as for the dirty talk and foreplay, often we guys keep that more of a secret till we are in that kind of moment anyways. so your original statement of "you can't really tell" holds more truth than most may ever know.

Probably the biggest indicator, is how considerate he is of other people, and how caring he is of others. If he care a lot about others, and is considerate of others, he will more likely be considerate of your feelings, and be more likely to care about your needs being med in bed.

It’s impossible to know for sure ahead of time, but I think a guy who is not selfish is more likely to be generous sexually. A guy who is creative should be able to keep it interesting. I think intelligence and good physical condition also matter.
