Porn producers struggle to come up with new and different storylines. Adding incest as an element allows for many more story variations. It also helps to explain why 19 year old girls are being banged by 50 year old guys all the time (this has always been common in porn). But it also helps justify employing older "MILF" porn girls who would have otherwise aged out of porn, but who enjoy doing porn and want to keep doing it. Incest storylines give them a reason to be in scenes with younger girls.

Porn is a business, and if producers can do something that makes them more money, and it's legal, they do it.
